MY FAVORITE SOURDOUGH RECIPE

I originally used this recipe for sourdough and then my friend Jocelyn shared one she'd found and I love it even more. Try it and let me know what you think. 

100 g of bubbly sourdough starter

370 g of room temperature water

10 g salt (i use ancient fine sea salt by Redmond)

400 g bakers white flour

120 g of spelt or rye or whole wheat. 

Here's an easy video on stretch, fold and coil method. 

Bake at 450 degrees in a cast iron pot - with lid on and then about 12 minutes with lid off.
