Aebleskivers are a Traditional Christmas dessert and a family holiday tradition at our home. that our yummy llttle danish pancakes made in a special cast iron pan. It's a family tradition to serve them Thanksgiving and Christmas mornings.
Beat the 4 egg whites in a medium-sized bowl until stiff but not dry. Reserve 2 egg yolks. Combine the dry ingredients in a bowl. In a high powered blender add the two egg yolks, buttermilk, vanilla extract, and melted butter and blend until smooth. Slowly add and blend in the dry ingredients. Fold in the beaten egg whites.
Fill each round of the Abelskivers pan with a bit of butter and heat over medium-high heat on top of stove. When the butter is hot and bubbly, fill the rounds with the batter- about 3/4 full.
When bubbly around the edges, turn each round upside down with a spoon or two forks. This is the tricky part - to try to get the ball turned over. It takes practice.
Continue cooking, turning until done, about 2 minutes. You’ll know it’s just about done because the ball will come away from the sides of the pan and it will be nice and brown. Sprinkle with powdered sugar. Our family likes to serve it with sour cream and apple butter. Enjoy!
