Eggplant, carrots, squash, onions, beets, turnips and apples, mushrooms - all make a wonderful meal - when chopped up - tossed in a big bowl - with good olive oil and a bit of balsamic vinaigrette and then placed into a roasting pan. Add a bit of sea salt, pepper, garlic salt if you have some then pop in the oven - 400 degrees until the vegetables are perfect. Usually about 40 minutes or so.
