Family Tradition for Christmas - Ableskivers

I was introduced to these wonderful Danish pancakes called Ableskivers before Michael and I got married and making them became a family tradition during Christmas.  They are totally worth the effort.

These little round - apple butter filled pancakes are made in a cast iron skillet that usually you can find at Ace Hardware or here.

Perhaps you're ready to add something new to your holiday traditions.

Here's our recipe:

First, separate 4 eggs - beat the egg whites in a medium sized bowl. You want the stiff but not dry. Put this aside.

Combine2 cups unbleached all purpose flour, 2 tablespoons of sugar, 1/2 teaspoon baking powder, 1/2 teaspoons baking soda, 1/2 teaspoon salt, 1/2 teaspoon cinnamon. Mix this well. You can choose to sift this together.

Melt 1/4 cup unsalted butter - melt and THEN combine it to the above ingredients that have been mixed together. Add 1/2 teaspoon vanilla after the butter is cooled. **I never use unsalted butter.

Add 2 cups of buttermilk along with the melted butter and mix until smooth.

THEN fold in the beaten egg whites.

Heat your Ableskiver pan - medium high heat on the top of the stove. Put a dollop of butter in each round. Then when the butter has melted and starts to bubble add a heaping tablespoon of the batter - fill each round to about three-quarters full.

Next - take a good teaspoon of apple butter and put in the middle of the batter.  When the batter becomes bubbly around the edges, turn each round upside down with a spoon, two forks or chop sticks. This is the tricky part - to turn the pancake round over. It takes practice, but you can do it.

Continue cooking, turning until done - takes about 2 minutes. You'll know the round pancakes is done because it will come away from the sides of the pan.

Serve on a platter - sprinkle with powdered sugar- add sour cream on the top - more apple butter and always drizzle with warm maple syrup
