Tuscan Kale Salad

Kale is just about to run it's seasonal course - meaning get it while you can and make it all sorts of ways because the season is almost over.

Kale is to be juiced, added to soup, and made into salad and eaten raw.  Bobby Flay has a great and easy recipe here for sauteed kale.  Real Simple has 10 Healthy kale recipes here.

And, finally, here's a great recipe (my favorite) similar to the kale salad you get at Tru Foods.

4 minced cloves of garlic, fresh squeezed lemon juice, finely chopped kale, EVOO and then salt and pepper to taste. Easy!
